
Midnight Tex-Mex Rice Skillet

Ingredients:
- 1 cup Rice
- 1 tablespoon Olive Oil
- 1/2 pound Ground Beef
- 1 cup Bell Peppers
- 1 cup Onions
- 1 cup Canned Black Beans
- 1 cup Canned Diced Tomatoes
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Chili Powder
- to taste Salt
- to taste Pepper
- 1 cup Cheddar Cheese
- 1 sliced for garnish Avocado
- 2 slices Senorita bread
Instructions:
- Cook the rice according to package instructions and set aside.
- Heat oil in a large skillet over medium heat. Add the ground beef and season with cumin, chili powder, salt and pepper. Cook until browned.
- Add the bell peppers and onions to the skillet and continue to cook until they are soft.
- Add the black beans and tomatoes to the skillet and stir to combine. Simmer for a few minutes until heated through.
- Stir in the cooked rice and half of the cheese until well combined.
- Sprinkle the remaining cheese on top and cover the skillet until the cheese is melted.
- Serve the Tex-Mex Rice Skillet with slices of avocado and senorita bread on the side. Enjoy your quick and easy midnight meal!
