Midnight Tex-Mex Rice Skillet

Ingredients:

  • 1 cup Rice
  • 1 tablespoon Olive Oil
  • 1/2 pound Ground Beef
  • 1 cup Bell Peppers
  • 1 cup Onions
  • 1 cup Canned Black Beans
  • 1 cup Canned Diced Tomatoes
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Chili Powder
  • to taste Salt
  • to taste Pepper
  • 1 cup Cheddar Cheese
  • 1 sliced for garnish Avocado
  • 2 slices Senorita bread

Instructions:

  1. Cook the rice according to package instructions and set aside.
  2. Heat oil in a large skillet over medium heat. Add the ground beef and season with cumin, chili powder, salt and pepper. Cook until browned.
  3. Add the bell peppers and onions to the skillet and continue to cook until they are soft.
  4. Add the black beans and tomatoes to the skillet and stir to combine. Simmer for a few minutes until heated through.
  5. Stir in the cooked rice and half of the cheese until well combined.
  6. Sprinkle the remaining cheese on top and cover the skillet until the cheese is melted.
  7. Serve the Tex-Mex Rice Skillet with slices of avocado and senorita bread on the side. Enjoy your quick and easy midnight meal!
