
Midnight Tamagoyaki (Japanese Omelette)

Ingredients:
- 4 Eggs
- 1 tbsp Sugar
- 1 tsp Soy Sauce
- 1 tsp Mirin
- 1 tbsp Vegetable Oil
Instructions:
- In a bowl, beat the eggs, sugar, soy sauce and mirin together until fully combined.
- Heat a non-stick pan over medium heat and add a small amount of vegetable oil.
- Pour a thin layer of the egg mixture into the pan. Once the bottom layer is set but the top is still runny, roll the egg towards one end of the pan with a spatula.
- Oil the empty part of the pan and pour another layer of egg mixture in let it flow underneath the first roll. Once the new layer is set, roll the egg again, starting from the side with the first roll, so they are rolled together.
- Repeat this process until all the egg mixture is used.
- Place the Tamagoyaki on a cutting board and cut into bite-size pieces. Serve immediately while hot.
