
Midnight Taco Cravings with Beef

Ingredients:
- 1 pound Flank steak or skirt steak
- 1 tablespoon Olive oil
- 8 Small corn tortillas
- 1 Lime
- 1 bunch Fresh cilantro
- 2 medium Onions
- 1/2 cup Guacamole
- 1/2 cup Salsa Verde
- to taste Salt and pepper
Instructions:
- 1. Season both sides of the steak with salt and pepper.
- 2. Heat the olive oil in a skillet over medium-high heat and cook the steak until your desired level of doneness is reached, about 2 to 3 minutes per side for medium-rare.
- 3. Let the meat rest for about 5 minutes, then slice it against the grain into bite-size pieces.
- 4. Warm each tortilla in a dry skillet over medium heat until it's soft and pliable, about 30 seconds per side.
- 5. To assemble each taco, place some sliced meat down the center of the tortilla, then top it with a spoonful each of guacamole and salsa verde. Sprinkle with chopped onions and fresh cilantro, and serve with a wedge of lime.
