Midnight Taco Cravings with Beef

Ingredients:

  • 1 pound Flank steak or skirt steak
  • 1 tablespoon Olive oil
  • 8 Small corn tortillas
  • 1 Lime
  • 1 bunch Fresh cilantro
  • 2 medium Onions
  • 1/2 cup Guacamole
  • 1/2 cup Salsa Verde
  • to taste Salt and pepper

Instructions:

  1. 1. Season both sides of the steak with salt and pepper.
  2. 2. Heat the olive oil in a skillet over medium-high heat and cook the steak until your desired level of doneness is reached, about 2 to 3 minutes per side for medium-rare.
  3. 3. Let the meat rest for about 5 minutes, then slice it against the grain into bite-size pieces.
  4. 4. Warm each tortilla in a dry skillet over medium heat until it's soft and pliable, about 30 seconds per side.
  5. 5. To assemble each taco, place some sliced meat down the center of the tortilla, then top it with a spoonful each of guacamole and salsa verde. Sprinkle with chopped onions and fresh cilantro, and serve with a wedge of lime.
