Midnight Sweet and Sour Pork Stir Fry

Ingredients:

  • 500 grams Boneless pork loin
  • 2 whole Bell peppers
  • 1 large Onion
  • 3 tablespoons White vinegar
  • 2 tablespoons Soya sauce
  • 2 tablespoons Cornflour
  • 2 tablespoons Brown sugar
  • 2 cloves Garlic
  • To Taste Red chilli flakes
  • 1 cup Pineapple pieces
  • As Needed Cooking oil

Instructions:

  1. Cut boneless pork loin into bite-sized pieces.
  2. In a bowl, mix vinegar, soya sauce, brown sugar, cornflour and a bit of salt until sugar and cornflour are fully dissolved.
  3. Heat oil in a wok. Add garlic and sauté until golden brown.
  4. Add the pork pieces and fry until browned on all sides.
  5. Slice the peppers and onion into thin strips. Add them into the wok and stir fry for a couple of minutes until they are tender-crisp.
  6. Stir in the prepared sauce. Let it simmer for a few minutes until the sauce thickens.
  7. Finally, add pineapple pieces and a sprinkle of red chilli flakes. Stir well to combine. Cook for another minute, then remove from heat.
  8. Serve hot over a bowl of steamed jasmine rice.
