
Midnight Sweet and Sour Pork Stir Fry

Ingredients:
- 500 grams Boneless pork loin
- 2 whole Bell peppers
- 1 large Onion
- 3 tablespoons White vinegar
- 2 tablespoons Soya sauce
- 2 tablespoons Cornflour
- 2 tablespoons Brown sugar
- 2 cloves Garlic
- To Taste Red chilli flakes
- 1 cup Pineapple pieces
- As Needed Cooking oil
Instructions:
- Cut boneless pork loin into bite-sized pieces.
- In a bowl, mix vinegar, soya sauce, brown sugar, cornflour and a bit of salt until sugar and cornflour are fully dissolved.
- Heat oil in a wok. Add garlic and sauté until golden brown.
- Add the pork pieces and fry until browned on all sides.
- Slice the peppers and onion into thin strips. Add them into the wok and stir fry for a couple of minutes until they are tender-crisp.
- Stir in the prepared sauce. Let it simmer for a few minutes until the sauce thickens.
- Finally, add pineapple pieces and a sprinkle of red chilli flakes. Stir well to combine. Cook for another minute, then remove from heat.
- Serve hot over a bowl of steamed jasmine rice.
