Ingredients:

  • 1 pound Beef Tenderloin
  • 2 teaspoons Szechuan Peppercorns
  • 4 Dried Red Chillies
  • 2 cloves Garlic
  • 1 inch Fresh Ginger Root
  • 2 tablespoons Soy Sauce
  • 1 tablespoon White Vinegar
  • 1 teaspoon Granulated Sugar
  • 3 Green Onions
  • 2 teaspoons Sesame Oil

Instructions:

  1. Firstly, roast the Szechuan peppercorns and dried red chillies in a dry pan over medium heat until they are smoking slightly and fragrant, then grind them into a coarse powder.
  2. Slice the beef tenderloin into thin strips and marinate it in a mixture of the Szechuan peppercorn and chilli powder, minced garlic, grated ginger root, soy sauce, vinegar, and sugar. Leave it to marinate in the fridge for at least 15 minutes.
  3. Heat some sesame oil in a wok over high heat and stir-fry the marinated beef until it is seared on all sides and cooked to your desired level.
  4. Garnish the cooked beef with chopped green onions and serve steaming hot straight from the wok.
