Ingredients:
- 1 pound Beef Tenderloin
- 2 teaspoons Szechuan Peppercorns
- 4 Dried Red Chillies
- 2 cloves Garlic
- 1 inch Fresh Ginger Root
- 2 tablespoons Soy Sauce
- 1 tablespoon White Vinegar
- 1 teaspoon Granulated Sugar
- 3 Green Onions
- 2 teaspoons Sesame Oil
Instructions:
- Firstly, roast the Szechuan peppercorns and dried red chillies in a dry pan over medium heat until they are smoking slightly and fragrant, then grind them into a coarse powder.
- Slice the beef tenderloin into thin strips and marinate it in a mixture of the Szechuan peppercorn and chilli powder, minced garlic, grated ginger root, soy sauce, vinegar, and sugar. Leave it to marinate in the fridge for at least 15 minutes.
- Heat some sesame oil in a wok over high heat and stir-fry the marinated beef until it is seared on all sides and cooked to your desired level.
- Garnish the cooked beef with chopped green onions and serve steaming hot straight from the wok.
