
Midnight Shrimp Arrabbiata

Ingredients:
- 2 tablespoons Olive oil
- 2 cloves Fresh garlic
- 1/2 teaspoon Red chili flakes
- 1 cup Canned diced tomatoes
- to taste Salt and pepper
- 1 pound Large shrimp
- 1 tablespoon Chopped fresh parsley
Instructions:
- Heat the olive oil over medium-high heat in a large pan.
- Add the garlic and red chili flakes to the pan and cook until the garlic is golden, but not burned.
- Add the canned tomatoes, salt, and pepper to the pan. Stir to combine with the garlic and chili flakes.
- Lower the heat to medium and let the sauce simmer for 10-15 minutes, stirring occasionally.
- Once the sauce has thickened a bit, add the shrimp to the pan. Cook until the shrimp are pink and cooked through, about 5 minutes.
- Stir in the chopped parsley, then taste and adjust the seasonings as needed.
- Serve the shrimp arrabbiata hot with a side salad or over whole grain spaghetti for a satisfying midnight snack.
