Midnight Shrimp Arrabbiata

Ingredients:

  • 2 tablespoons Olive oil
  • 2 cloves Fresh garlic
  • 1/2 teaspoon Red chili flakes
  • 1 cup Canned diced tomatoes
  • to taste Salt and pepper
  • 1 pound Large shrimp
  • 1 tablespoon Chopped fresh parsley

Instructions:

  1. Heat the olive oil over medium-high heat in a large pan.
  2. Add the garlic and red chili flakes to the pan and cook until the garlic is golden, but not burned.
  3. Add the canned tomatoes, salt, and pepper to the pan. Stir to combine with the garlic and chili flakes.
  4. Lower the heat to medium and let the sauce simmer for 10-15 minutes, stirring occasionally.
  5. Once the sauce has thickened a bit, add the shrimp to the pan. Cook until the shrimp are pink and cooked through, about 5 minutes.
  6. Stir in the chopped parsley, then taste and adjust the seasonings as needed.
  7. Serve the shrimp arrabbiata hot with a side salad or over whole grain spaghetti for a satisfying midnight snack.
