
Midnight Shakshuka

Ingredients:
- 2 tablespoons Olive Oil
- 1 large Onion
- 2 Garlic Cloves
- 1 Red Bell Pepper
- 1 can (400 g) Canned Tomatoes
- 1 teaspoon each Spices (Paprika, Cumin, Cayenne Pepper)
- to taste Salt and Pepper
- 4 Eggs
- 100 grams Feta Cheese
- 1 bunch Parsley
Instructions:
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and cook until it's soft and translucent.
- Add the chopped garlic and bell pepper to the skillet. Cook for a few more minutes.
- Add the canned tomatoes and the spices. Season with salt and pepper. Let the sauce simmer for about 10 minutes.
- Break the eggs into the skillet right on top of the tomato sauce. Cover the skillet and let it cook for about 10 minutes, or until the eggs are done to your liking.
- Sprinkle feta cheese and chopped parsley right before serving. Enjoy your comfortable Midnight Shakshuka directly from the skillet!
