Midnight Seafood Fried Rice

Ingredients:

  • 2 cups Cooked rice
  • 1 cup Mixed seafood (shrimp, squid, scallops)
  • 2 stalks Green onion
  • 2 whole Eggs
  • 2 whole Garlic cloves
  • 1 tablespoon Ginger
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • taste Ground white pepper
  • 2 tablespoons Vegetable oil

Instructions:

  1. Cook the rice according to the package instructions and set aside.
  2. Heat the vegetable oil in a large wok or frying pan over medium-high heat.
  3. Add the seafood to the pan and stir-fry until cooked through. Remove the seafood from the pan and set aside.
  4. In the same pan, add the garlic and ginger and stir-fry until fragrant.
  5. Whisk the eggs in a bowl, then push the garlic and ginger to the side of the pan and pour the eggs into the other side. Scramble the eggs, then mix with the garlic and ginger.
  6. Add the cooked rice to the pan and mix well with the eggs, garlic, and ginger. Stir-fry for a few minutes until the rice is heated through.
  7. Add the soy sauce, sesame oil, and white pepper to the pan and mix until the rice is evenly coated.
  8. Return the seafood to the pan and add the green onions. Stir-fry for another minute until everything is well combined.
  9. Serve hot with additional soy sauce on the side if desired.
