
Midnight Seafood Fried Rice

Ingredients:
- 2 cups Cooked rice
- 1 cup Mixed seafood (shrimp, squid, scallops)
- 2 stalks Green onion
- 2 whole Eggs
- 2 whole Garlic cloves
- 1 tablespoon Ginger
- 2 tablespoons Soy sauce
- 1 tablespoon Sesame oil
- taste Ground white pepper
- 2 tablespoons Vegetable oil
Instructions:
- Cook the rice according to the package instructions and set aside.
- Heat the vegetable oil in a large wok or frying pan over medium-high heat.
- Add the seafood to the pan and stir-fry until cooked through. Remove the seafood from the pan and set aside.
- In the same pan, add the garlic and ginger and stir-fry until fragrant.
- Whisk the eggs in a bowl, then push the garlic and ginger to the side of the pan and pour the eggs into the other side. Scramble the eggs, then mix with the garlic and ginger.
- Add the cooked rice to the pan and mix well with the eggs, garlic, and ginger. Stir-fry for a few minutes until the rice is heated through.
- Add the soy sauce, sesame oil, and white pepper to the pan and mix until the rice is evenly coated.
- Return the seafood to the pan and add the green onions. Stir-fry for another minute until everything is well combined.
- Serve hot with additional soy sauce on the side if desired.
