Midnight Scrambled Eggs

Ingredients:

  • 2 Eggs
  • to taste Salt
  • to taste Black Pepper
  • 1 tbsp Butter

Instructions:

  1. Crack the eggs into a bowl and beat them until the yolks and white are fully combined. Season with salt and pepper.
  2. Heat a non-stick frying pan over medium-high heat. Once hot, add the butter and let it melt.
  3. Pour the beaten eggs into the pan. Let them cook undisturbed until they start to set around the edges, about 1-2 minutes.
  4. Stir the eggs continuously with a spatula, pushing them from one side of the pan to the other, until they are softly set and slightly runny in places, about 1 minute more.
  5. Immediately remove from heat and serve hot, making sure not to overcook.
