Midnight Ramen

Ingredients:

  • 2 packets Dried ramen noodles
  • 2 cloves Garlic
  • 1.5 tablespoons Low-sodium soy sauce
  • 1 tablespoon Sesame oil
  • 1/4 cup Sliced green onions
  • 4 cups Chicken broth
  • 1 cup Sliced mushrooms
  • 2 Soft boiled eggs
  • 1/2 cup Sliced pork belly

Instructions:

  1. Bring a large pot of water to boil. Add the ramen noodles and cook according to package instructions. Drain and set aside.
  2. In a large pot over medium heat, saute the garlic in the sesame oil until fragrant.
  3. Add the soy sauce and sesame oil, stir to combine.
  4. Add the chicken broth, bring to a boil, and reduce to simmer. Stir in the mushrooms. Let simmer for 10 minutes.
  5. Ladle the broth into bowls. Add the drained ramen noodles. Top with soft boiled eggs, green onions, and pork belly.
  6. Serve immediately and enjoy your midnight comfort food.
