Midnight Puttanesca Spaghetti

Ingredients:

  • 200 grams Spaghetti
  • 4 cloves Garlic
  • 2 tablespoons Olive oil
  • 2 pieces Anchovy fillets
  • 1/2 teaspoon Dried chili flakes
  • 400 grams Canned tomatoes
  • 1 tablespoon Capers
  • 1/4 cup Black olives
  • 1/4 cup Fresh parsley

Instructions:

  1. In a large pot of salted boiling water, cook the spaghetti until al dente.
  2. While the spaghetti is cooking, finely chop the garlic and anchovies.
  3. Heat the olive oil in a large pan over medium heat. Add the garlic, anchovies, and chili flakes. Cook until the anchovies dissolve into the oil and the garlic is golden brown.
  4. Add the tomatoes, capers, and olives to the pan. Break up the tomatoes with your spoon, and let it simmer for 8-10 minutes until the sauce thickens.
  5. Drain the spaghetti and add it to the pan with the sauce. Toss well to combine.
  6. Garnish with chopped parsley just before serving. Enjoy your Italian midnight craving!
