
Midnight Pork a la Dijon

Ingredients:
- 2 pieces Pork chops
- 2 tablespoons Dijon Mustard
- 2 pieces Garlic Cloves
- 2 pieces Shallots
- 1/2 cup Dry White Wine
- 1/4 cup Heavy Cream
- 1 tablespoon Fresh Tarragon
- 1 tablespoon Butter
- to taste Salt & Pepper
Instructions:
- Season the pork chops with salt and pepper.
- Heat butter in a pan over medium heat, add pork chops and cook until browned on both sides. Remove and set aside.
- In the same pan, add chopped shallots and garlic, sauté until shallots become translucent.
- Increase heat to high, add white wine to deglaze the pan, scraping to loosen browned bits. Reduce heat to low, add the dijon mustard and stir well.
- Add the heavy cream, stir and bring to a simmer.
- Return the pork chops to the pan, spoon some sauce over them, cover and cook for about 5 minutes or until pork is cooked to your liking.
- Plate the pork chops, spoon additional sauce over them, and garnish with fresh tarragon. Serve hot.
