Midnight Pork a la Dijon

Ingredients:

  • 2 pieces Pork chops
  • 2 tablespoons Dijon Mustard
  • 2 pieces Garlic Cloves
  • 2 pieces Shallots
  • 1/2 cup Dry White Wine
  • 1/4 cup Heavy Cream
  • 1 tablespoon Fresh Tarragon
  • 1 tablespoon Butter
  • to taste Salt & Pepper

Instructions:

  1. Season the pork chops with salt and pepper.
  2. Heat butter in a pan over medium heat, add pork chops and cook until browned on both sides. Remove and set aside.
  3. In the same pan, add chopped shallots and garlic, sauté until shallots become translucent.
  4. Increase heat to high, add white wine to deglaze the pan, scraping to loosen browned bits. Reduce heat to low, add the dijon mustard and stir well.
  5. Add the heavy cream, stir and bring to a simmer.
  6. Return the pork chops to the pan, spoon some sauce over them, cover and cook for about 5 minutes or until pork is cooked to your liking.
  7. Plate the pork chops, spoon additional sauce over them, and garnish with fresh tarragon. Serve hot.
