Midnight Miso Marinated Black Cod

Total Time: 30 minutes plus overnight marination

Ingredients:

  • 2 Pieces Black Cod Fillets
  • 1 Cup Sake
  • 0.5 Cup White Miso Paste
  • 0.25 Cup Granulated Sugar
  • 2 Stalks Green Onions
  • 1 Tablespoon Sesame Seeds
  • 2 Servings Steamed Rice
  • To taste Soy Sauce

Instructions:

  1. In a small saucepan over medium heat, bring the sake to a boil. Add the miso paste and whisk until smooth. Then add the sugar and whisk until fully dissolved. Remove from heat and let cool to room temperature.
  2. Rinse the black cod fillets under cold water and pat dry with paper towels.
  3. Coat the black cod with the miso marinade and refrigerate overnight, or for at least 2 hours.
  4. Preheat your broiler or grill. Lightly wipe off any excess miso marinade with a paper towel, but leave a thin layer on the fish.
  5. Broil or grill the fish for about 3-4 minutes on each side, or until the surface turns brown and the fish begins to flake.
  6. Serve with steamed rice, garnished with thinly sliced green onions and sesame seeds. Add soy sauce to taste.
