Midnight Miso Marinated Black Cod

Total Time: 30 minutes plus overnight marination
Ingredients:
- 2 Pieces Black Cod Fillets
- 1 Cup Sake
- 0.5 Cup White Miso Paste
- 0.25 Cup Granulated Sugar
- 2 Stalks Green Onions
- 1 Tablespoon Sesame Seeds
- 2 Servings Steamed Rice
- To taste Soy Sauce
Instructions:
- In a small saucepan over medium heat, bring the sake to a boil. Add the miso paste and whisk until smooth. Then add the sugar and whisk until fully dissolved. Remove from heat and let cool to room temperature.
- Rinse the black cod fillets under cold water and pat dry with paper towels.
- Coat the black cod with the miso marinade and refrigerate overnight, or for at least 2 hours.
- Preheat your broiler or grill. Lightly wipe off any excess miso marinade with a paper towel, but leave a thin layer on the fish.
- Broil or grill the fish for about 3-4 minutes on each side, or until the surface turns brown and the fish begins to flake.
- Serve with steamed rice, garnished with thinly sliced green onions and sesame seeds. Add soy sauce to taste.
