Midnight Mexican Shrimp Quesadilla

Ingredients:

  • 200 grams Medium Shrimps
  • 4 pieces Flour Tortillas
  • 1 cup Monterey Jack Cheese
  • 1 bottle Bottle of Salsa
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1/4 cup Fresh Cilantro
  • 1 piece Lime
  • to taste Salt and Pepper

Instructions:

  1. Peel and clean the shrimps. Season them with salt, pepper, and the juice of half a lime.
  2. Heat a pan on medium heat, add a tablespoon of olive oil and toss in the seasoned shrimps. Cook until they turn pink, usually about 5 minutes. Drain and set aside.
  3. On the same pan, add the rest of the olive oil and lightly sauté the garlic until it becomes fragrant.
  4. Place a tortilla in the pan, then sprinkle a hefty amount of cheese and the cooked shrimps. Top with another tortilla and press down with a spatula.
  5. Cook the quesadilla for about 1-2 minutes before flipping to cook the other side until both sides are crispy and the cheese has melted.
  6. Remove from the heat and cut into quarters. Serve with salsa and a sprinkle of fresh cilantro. Repeat the process for the other tortillas.
  7. Enjoy your savory midnight snack!
