
Midnight Mexican Shrimp Quesadilla

Ingredients:
- 200 grams Medium Shrimps
- 4 pieces Flour Tortillas
- 1 cup Monterey Jack Cheese
- 1 bottle Bottle of Salsa
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- 1/4 cup Fresh Cilantro
- 1 piece Lime
- to taste Salt and Pepper
Instructions:
- Peel and clean the shrimps. Season them with salt, pepper, and the juice of half a lime.
- Heat a pan on medium heat, add a tablespoon of olive oil and toss in the seasoned shrimps. Cook until they turn pink, usually about 5 minutes. Drain and set aside.
- On the same pan, add the rest of the olive oil and lightly sauté the garlic until it becomes fragrant.
- Place a tortilla in the pan, then sprinkle a hefty amount of cheese and the cooked shrimps. Top with another tortilla and press down with a spatula.
- Cook the quesadilla for about 1-2 minutes before flipping to cook the other side until both sides are crispy and the cheese has melted.
- Remove from the heat and cut into quarters. Serve with salsa and a sprinkle of fresh cilantro. Repeat the process for the other tortillas.
