Midnight Mexican Pork Tacos

Ingredients:

  • 0.5 pound Pork loin
  • 6 pieces Small tortillas
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Chili Powder
  • 0.5 teaspoon Salt
  • 1 small Onion
  • 0.25 cup Cilantro
  • 1 piece Lime

Instructions:

  1. Cut the pork loin into thin slices, then chop into small pieces.
  2. Heat the olive oil in a skillet over medium heat, then add the pork.
  3. Coat the pork in cumin, garlic powder, chili powder, and salt. Cook until the pork is browned and crispy.
  4. Chop the onion and cilantro while the pork is cooking.
  5. Warm the tortillas in a dry skillet or in the microwave.
  6. Top each tortilla with a scoop of the cooked pork, a sprinkle of chopped onion and cilantro, and a squeeze of lime juice.
  7. Serve immediately, and enjoy these delicious, comforting, midnight Mexican pork tacos.
