Midnight Mexican Pollo Exotico

Ingredients:

  • 2 pieces Chicken Breasts
  • 2 tablespoons Olive Oil
  • 3 pieces Guajillo Chilies
  • 3 cloves Garlic
  • 1 teaspoon Cumin
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Oregano
  • 1 tablespoon Agave Nectar
  • 1 piece Lime
  • 1 piece Avocado
  • 100 grams Queso Fresco

Instructions:

  1. 1. Toast the guajillo chilies in a pan until fragrant, then rehydrate them in warm water.
  2. 2. Blend the rehydrated chilies, garlic, cumin, salt, pepper, oregano, squeeze of lime, and agave nectar to make a smooth marinade.
  3. 3. Marinate the chicken breasts in this mixture for at least 10 minutes.
  4. 4. Heat the olive oil in a pan, and cook the chicken until it's done.
  5. 5. Serve the chicken with slices of avocado and crumbled queso fresco on top.
