
Midnight Mexican Pollo Exotico

Ingredients:
- 2 pieces Chicken Breasts
- 2 tablespoons Olive Oil
- 3 pieces Guajillo Chilies
- 3 cloves Garlic
- 1 teaspoon Cumin
- to taste Salt
- to taste Pepper
- 1 teaspoon Oregano
- 1 tablespoon Agave Nectar
- 1 piece Lime
- 1 piece Avocado
- 100 grams Queso Fresco
Instructions:
- 1. Toast the guajillo chilies in a pan until fragrant, then rehydrate them in warm water.
- 2. Blend the rehydrated chilies, garlic, cumin, salt, pepper, oregano, squeeze of lime, and agave nectar to make a smooth marinade.
- 3. Marinate the chicken breasts in this mixture for at least 10 minutes.
- 4. Heat the olive oil in a pan, and cook the chicken until it's done.
- 5. Serve the chicken with slices of avocado and crumbled queso fresco on top.
