
Midnight Mexican Huevos Rancheros

Ingredients:
- 4 unit Eggs
- 4 unit Corn tortillas
- 1 cup Canned black beans
- 1 cup Tomato salsa
- 1 unit Avocado
- 1/2 cup Mexican cheese blend
- 2 tbsp Canola oil
- to taste Salt
- to taste Pepper
Instructions:
- Heat 1 tbsp of canola oil in a pan over medium heat. Add tortillas one at a time, cooking for about 30 seconds on each side until crisp and golden. Set aside on kitchen paper to absorb any excess oil.
- In the same pan, add the remaining canola oil and gently crack the eggs, being careful not to break the yolk. Cook until the whites are set but yolks remain runny. Season with salt and pepper.
- While eggs are cooking, heat black beans and tomato salsa in separate pans over medium heat until heated through.
- To assemble, place a tortilla on a plate, spread a spoonful of black beans, top with an egg, and spoon tomato salsa over the top.
- Garnish with Mexican cheese and slices of avocado. Serve immediately for a satisfying midnight craving, Mexican comfort food delight.
