
Midnight Mexican Fish Tacos

Ingredients:
- 2 pieces White Fish Fillets
- 4 pieces Tortillas
- 1/4 whole Red Onion
- 2 pieces Tomatoes
- 1 whole Avocado
- 1 whole Lime
- 1/2 cup chopped Fresh Cilantro
- 2 tablespoons Olive Oil
- to taste Salt
- to taste Black Pepper
Instructions:
- Cut the fish fillets into strips, place them in a bowl and season with salt and pepper.
- Heat 1 tablespoon of olive oil in a pan over medium heat. Add the fish strips and cook for 4-5 minutes on each side, or until they're cooked through. Remove from heat and set them aside.
- Chop the red onion, tomatoes, avocado and cilantro, and mix them together in a bowl. Squeeze the lime over the mix and add salt to taste, stirring everything together until well combined.
- Heat the tortillas in a dry skillet over medium heat, about 30 seconds on each side or until they're warm.
- Place the cooked fish on each tortilla, top with the onion-tomato-avocado mix, fold in half and serve immediately.
