
Midnight Mediterranean Shakshuka Bliss

Ingredients:
- 2 tbsp Extra Virgin Olive Oil
- 1 Small white onion
- 2 Garlic Cloves
- 1 Red Bell Pepper
- 4 Tomatoes
- 1 tsp Ground Cumin
- 1 tsp Paprika
- 1/2 tsp Cayenne Pepper
- 4 Eggs
- 1/2 cup Crumbled Feta Cheese
- 1/2 cup Chopped Fresh Parsley
Instructions:
- In a large skillet or frying pan, heat the olive oil over medium heat.
- Add the chopped onion and sauté until it starts to get tender. Add chopped garlic and diced bell pepper and continue to sauté until all the vegetables are soft.
- Add diced tomatoes, cumin, paprika, and cayenne. Lower the heat to medium-low and let it simmer for about 15 minutes, until it starts to reduce.
- Make small wells in the sauce and crack an egg into each one. Cover the skillet and let it cook for 5 to 7 minutes, or until the eggs are cooked to your liking.
- Sprinkle the feta cheese and chopped parsley on top just before serving. Enjoy this comforting dish with a slice of crusty bread.
