Midnight Mediterranean Shakshuka Bliss

Ingredients:

  • 2 tbsp Extra Virgin Olive Oil
  • 1 Small white onion
  • 2 Garlic Cloves
  • 1 Red Bell Pepper
  • 4 Tomatoes
  • 1 tsp Ground Cumin
  • 1 tsp Paprika
  • 1/2 tsp Cayenne Pepper
  • 4 Eggs
  • 1/2 cup Crumbled Feta Cheese
  • 1/2 cup Chopped Fresh Parsley

Instructions:

  1. In a large skillet or frying pan, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until it starts to get tender. Add chopped garlic and diced bell pepper and continue to sauté until all the vegetables are soft.
  3. Add diced tomatoes, cumin, paprika, and cayenne. Lower the heat to medium-low and let it simmer for about 15 minutes, until it starts to reduce.
  4. Make small wells in the sauce and crack an egg into each one. Cover the skillet and let it cook for 5 to 7 minutes, or until the eggs are cooked to your liking.
  5. Sprinkle the feta cheese and chopped parsley on top just before serving. Enjoy this comforting dish with a slice of crusty bread.
