Midnight Mediterranean Pasta

Ingredients:

  • 200 grams Pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 teaspoon Crushed red pepper
  • 1 cup Cherry tomatoes
  • 1/2 cup Feta cheese
  • 1/4 cup Fresh basil
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, approximately 8-10 minutes. Drain and set aside.
  2. While pasta is cooking, heat olive oil in a large pan over medium heat. Add garlic and crushed red pepper and sauté for 1-2 minutes until fragrant.
  3. Add cherry tomatoes to the pan and cook until they begin to burst, about 5-7 minutes. Season with salt and pepper.
  4. Add cooked pasta to the pan with tomatoes and toss to combine. Crumble the feta cheese over the top and stir until it's partially melted into the pasta.
  5. Remove from heat and garnish with fresh basil before serving. Enjoy!
