Midnight Masala Pork Curry

Ingredients:

  • 500 grams Pork
  • 1 large Onion
  • 6 cloves Garlic
  • 1 inch piece Ginger
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 2 teaspoons Coriander Powder
  • 3 pods Cardamom Pods
  • 1 stick Cinnamon Stick
  • to taste Black Pepper
  • to taste Salt
  • 2 tablespoons Vegetable Oil
  • 1 cup Water

Instructions:

  1. Cut the pork into bite-sized pieces. Set aside.
  2. Finely chop the onion, garlic and ginger. Set aside.
  3. Heat oil in a pan.
  4. Add the cumin seeds, cardamom, cinnamon stick and sauté until they start to crackle.
  5. Add the finely chopped onions, garlic and ginger to the pan. Sauté until golden brown.
  6. Add the pork pieces to the pan. Fry until they start to brown.
  7. Add the turmeric, cumin, and coriander powders. Mix well to coat the pork.
  8. Add water and bring the curry to a boil.
  9. Once it reaches a boil, reduce the heat to low and let it simmer until the pork is cooked through and the gravy has thickened. This will take approximately 30-35 minutes.
  10. Once cooked, add salt and pepper to taste. Let it simmer for a few more minutes. Your Midnight Masala Pork Curry is ready to serve.
