
Midnight Masala Pork Curry

Ingredients:
- 500 grams Pork
- 1 large Onion
- 6 cloves Garlic
- 1 inch piece Ginger
- 1 teaspoon Turmeric Powder
- 1 teaspoon Cumin Powder
- 2 teaspoons Coriander Powder
- 3 pods Cardamom Pods
- 1 stick Cinnamon Stick
- to taste Black Pepper
- to taste Salt
- 2 tablespoons Vegetable Oil
- 1 cup Water
Instructions:
- Cut the pork into bite-sized pieces. Set aside.
- Finely chop the onion, garlic and ginger. Set aside.
- Heat oil in a pan.
- Add the cumin seeds, cardamom, cinnamon stick and sauté until they start to crackle.
- Add the finely chopped onions, garlic and ginger to the pan. Sauté until golden brown.
- Add the pork pieces to the pan. Fry until they start to brown.
- Add the turmeric, cumin, and coriander powders. Mix well to coat the pork.
- Add water and bring the curry to a boil.
- Once it reaches a boil, reduce the heat to low and let it simmer until the pork is cooked through and the gravy has thickened. This will take approximately 30-35 minutes.
- Once cooked, add salt and pepper to taste. Let it simmer for a few more minutes. Your Midnight Masala Pork Curry is ready to serve.
