Midnight Marinated Pork Tacos

Ingredients:
- 500 grams Pork Shoulder
- 4 cloves Garlic
- 2 teaspoons Chipotle Chili Powder
- 1 teaspoon Oregano
- 1 teaspoon Cumin
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 cup Orange Juice
- 1/4 cup Lime Juice
- 4 pieces Corn Tortillas
- 1 piece Red Onion
- 1/4 cup Cilantro
- 1 piece Avocado
- 1 piece Lime
Instructions:
- Combine garlic, chipotle chili powder, oregano, cumin, salt, pepper, orange juice, and lime juice in a bowl. Stir until it becomes a marinade.
- Put the pork shoulder in a large ziplock bag, pour the marinade over it and seal the bag. Let it marinate in the refrigerator for at least an hour.
- After marinating, place the pork shoulder along with the remaining marinade in a slow cooker. Cook it on low for about 2 hours until the pork is tender and can be pulled apart easily.
- Once cooked, shred the pork using two forks. Then, return the shredded pork back to the slow cooker to soak up more of the juices.
- To assemble the tacos, place a good amount of pork on each tortilla. Top with chopped red onions, cilantro, sliced avocados and squeeze some lime juice over it.
- Finish with a little extra chipotle powder (if desired) and enjoy your Midnight Marinated Pork Tacos that are perfect for any midnight cravings!
