Midnight Mandarin Orange Chicken

Ingredients:

  • 2 pieces Boneless Chicken Breast
  • 1 can Mandarin Oranges
  • 4 tablespoons Soy Sauce
  • 1 tablespoon Brown Sugar
  • 2 tablespoons Cornstarch
  • 1 cup White Rice
  • 2 cloves Garlic
  • 1 inch Ginger
  • 2 stalks Green Onions
  • 1 tablespoon Vegetable Oil

Instructions:

  1. In one medium saucepan, cook the rice according to package instructions.
  2. In a large skillet, heat the vegetable oil over medium-high heat.
  3. Add the diced chicken breast to the skillet and cook until browned on all sides.
  4. Drain the mandarin oranges, saving the juice. Set aside the oranges and mix the juice with the soy sauce, brown sugar, ginger, and crushed garlic in a small bowl.
  5. Pour the sauce over the chicken. Let it simmer for about 5 minutes until the sauce thickens.
  6. Dissolve the cornstarch in a small amount of water and stir it into the sauce to thicken it further if desired.
  7. Add in the mandarin oranges and chopped green onions, and stir to combine. Cook for another 2 minutes.
  8. Serve the orange chicken over the cooked rice. Enjoy your midnight craving with this comfort food.
