
Midnight Mandarin Orange Chicken

Ingredients:
- 2 pieces Boneless Chicken Breast
- 1 can Mandarin Oranges
- 4 tablespoons Soy Sauce
- 1 tablespoon Brown Sugar
- 2 tablespoons Cornstarch
- 1 cup White Rice
- 2 cloves Garlic
- 1 inch Ginger
- 2 stalks Green Onions
- 1 tablespoon Vegetable Oil
Instructions:
- In one medium saucepan, cook the rice according to package instructions.
- In a large skillet, heat the vegetable oil over medium-high heat.
- Add the diced chicken breast to the skillet and cook until browned on all sides.
- Drain the mandarin oranges, saving the juice. Set aside the oranges and mix the juice with the soy sauce, brown sugar, ginger, and crushed garlic in a small bowl.
- Pour the sauce over the chicken. Let it simmer for about 5 minutes until the sauce thickens.
- Dissolve the cornstarch in a small amount of water and stir it into the sauce to thicken it further if desired.
- Add in the mandarin oranges and chopped green onions, and stir to combine. Cook for another 2 minutes.
- Serve the orange chicken over the cooked rice. Enjoy your midnight craving with this comfort food.
