
Midnight Healthy Tofu Ramen

Ingredients:
- 2 packs Ramen noodles
- 200 grams Tofu
- 2 tablespoons Miso paste
- 4 cups Vegetable broth
- 2 cups Baby spinach
- 2 stalks Green onions
- 2 cloves Garlic
- 1 teaspoon Ginger
- 1 tablespoon Olive oil
- 2 Hard boiled eggs
Instructions:
- Prepare the ramen noodles as per the instructions on the package. Drain well and set aside.
- In a large pan, heat olive oil over medium heat. Add minced garlic and ginger, sauté for a minute until fragrant.
- Add tofu cubes to the pan and sauté until they turn golden brown. Remove the tofu and set aside.
- In the same pan, add vegetable broth, miso paste and stir well. Add baby spinach and let it simmer until it wilts.
- Divide the cooked ramen noodles into two large bowls. Pour over the miso vegetable broth with spinach. Top each bowl with half of the tofu cubes, sliced green onions and a hard-boiled egg.
- Serve the hot Midnight Healthy Tofu Ramen immediately for your midnight cravings.
