Midnight Healthy Tofu Ramen

Ingredients:

  • 2 packs Ramen noodles
  • 200 grams Tofu
  • 2 tablespoons Miso paste
  • 4 cups Vegetable broth
  • 2 cups Baby spinach
  • 2 stalks Green onions
  • 2 cloves Garlic
  • 1 teaspoon Ginger
  • 1 tablespoon Olive oil
  • 2 Hard boiled eggs

Instructions:

  1. Prepare the ramen noodles as per the instructions on the package. Drain well and set aside.
  2. In a large pan, heat olive oil over medium heat. Add minced garlic and ginger, sauté for a minute until fragrant.
  3. Add tofu cubes to the pan and sauté until they turn golden brown. Remove the tofu and set aside.
  4. In the same pan, add vegetable broth, miso paste and stir well. Add baby spinach and let it simmer until it wilts.
  5. Divide the cooked ramen noodles into two large bowls. Pour over the miso vegetable broth with spinach. Top each bowl with half of the tofu cubes, sliced green onions and a hard-boiled egg.
  6. Serve the hot Midnight Healthy Tofu Ramen immediately for your midnight cravings.
