Midnight Healthy Chicken Fried Rice

Ingredients:

  • 2 cups, cooked Brown rice
  • 1 cup, diced Boneless chicken breast
  • 2 tablespoons Olive oil
  • 1 cup, sliced Mushrooms
  • 2 medium, diced Carrots
  • 1 medium, diced Green bell pepper
  • 2 cloves, minced Garlic
  • 2 tablespoons Low-sodium soy sauce
  • 1/4 teaspoon Ground black pepper
  • 1 large, beaten Egg
  • 2 stalks, chopped Green onions

Instructions:

  1. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
  2. Add the chicken and cook until it's no longer pink. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining olive oil, followed by the carrots, bell pepper, and mushrooms. Cook for 3-4 minutes, stirring frequently.
  4. Add the garlic and continue to cook for another minute until the garlic is fragrant.
  5. Push the vegetables to one side of the skillet and pour the beaten egg into the other side. Scramble the egg and mix it with the vegetables.
  6. Add the cooked rice to the skillet. Pour the soy sauce, black pepper, and cooked chicken over the top. Stir well to combine, and cook for another 2 minutes.
  7. Top with chopped green onions before serving.
