
Midnight Healthy Chicken Fried Rice

Ingredients:
- 2 cups, cooked Brown rice
- 1 cup, diced Boneless chicken breast
- 2 tablespoons Olive oil
- 1 cup, sliced Mushrooms
- 2 medium, diced Carrots
- 1 medium, diced Green bell pepper
- 2 cloves, minced Garlic
- 2 tablespoons Low-sodium soy sauce
- 1/4 teaspoon Ground black pepper
- 1 large, beaten Egg
- 2 stalks, chopped Green onions
Instructions:
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
- Add the chicken and cook until it's no longer pink. Remove from the skillet and set aside.
- In the same skillet, add the remaining olive oil, followed by the carrots, bell pepper, and mushrooms. Cook for 3-4 minutes, stirring frequently.
- Add the garlic and continue to cook for another minute until the garlic is fragrant.
- Push the vegetables to one side of the skillet and pour the beaten egg into the other side. Scramble the egg and mix it with the vegetables.
- Add the cooked rice to the skillet. Pour the soy sauce, black pepper, and cooked chicken over the top. Stir well to combine, and cook for another 2 minutes.
- Top with chopped green onions before serving.
