Midnight Fruit Salad with Grilled Chicken

Ingredients:

  • 2 items Chicken breasts
  • 2 cups Mixed fruits (strawberries, blueberries, kiwi, apple)
  • 2 cups Mixed salad greens
  • 2 tablespoons Olive oil
  • 1 tablespoon Honey
  • 1 tablespoon Lemon juice
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Heat 1 tablespoon of olive oil in a grill pan over medium-high heat.
  2. Season chicken breasts with salt and pepper.
  3. Grill the chicken breasts until cooked through, about 5-7 minutes each side. Remove from the grill and set aside to cool.
  4. While the chicken is cooling, prepare the fruit salad by combining mixed fruits and salad greens in a large bowl.
  5. In a small bowl, whisk together the remaining olive oil, honey and lemon juice to make a dressing. Season with salt and pepper.
  6. Slice the cooled chicken into thin strips.
  7. Pour the dressing over the fruit salad and toss until evenly coated.
  8. Add the grilled chicken to the salad and gently toss to combine.
  9. Serve immediately, or refrigerate until ready to enjoy your midnight craving.
