
Midnight Fruit Salad with Grilled Chicken

Ingredients:
- 2 items Chicken breasts
- 2 cups Mixed fruits (strawberries, blueberries, kiwi, apple)
- 2 cups Mixed salad greens
- 2 tablespoons Olive oil
- 1 tablespoon Honey
- 1 tablespoon Lemon juice
- to taste Salt
- to taste Pepper
Instructions:
- Heat 1 tablespoon of olive oil in a grill pan over medium-high heat.
- Season chicken breasts with salt and pepper.
- Grill the chicken breasts until cooked through, about 5-7 minutes each side. Remove from the grill and set aside to cool.
- While the chicken is cooling, prepare the fruit salad by combining mixed fruits and salad greens in a large bowl.
- In a small bowl, whisk together the remaining olive oil, honey and lemon juice to make a dressing. Season with salt and pepper.
- Slice the cooled chicken into thin strips.
- Pour the dressing over the fruit salad and toss until evenly coated.
- Add the grilled chicken to the salad and gently toss to combine.
- Serve immediately, or refrigerate until ready to enjoy your midnight craving.
