Ingredients:
- 4 pieces Tortillas
- 1.5 cups Mixed fruits (like berries, mango, and kiwi)
- 2 tablespoons White sugar
- 1 teaspoon Cinnamon
- 2 tablespoons Butter
- 1.5 cups Brown sugar
- 1 cup Water
Instructions:
- Preheat your oven to 350°F (175°C).
- Toss the mixed fruits, white sugar, and 1/2 teaspoon of cinnamon together in a bowl.
- Distribute the fruit mixture evenly onto the tortillas. Roll them up, and place them in a lightly greased baking dish, seam side down.
- In a small saucepan, bring the butter, brown sugar, and water to a boil. Reduce the heat and simmer, stirring frequently until it thickens, about 10 minutes.
- Pour the sugary mixture over the enchiladas and sprinkle with the remaining cinnamon.
- Bake in the preheated oven for 20 minutes, or until golden and bubbly.
