Midnight Fruit Enchiladas

Ingredients:

  • 4 pieces Tortillas
  • 1.5 cups Mixed fruits (like berries, mango, and kiwi)
  • 2 tablespoons White sugar
  • 1 teaspoon Cinnamon
  • 2 tablespoons Butter
  • 1.5 cups Brown sugar
  • 1 cup Water

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Toss the mixed fruits, white sugar, and 1/2 teaspoon of cinnamon together in a bowl.
  3. Distribute the fruit mixture evenly onto the tortillas. Roll them up, and place them in a lightly greased baking dish, seam side down.
  4. In a small saucepan, bring the butter, brown sugar, and water to a boil. Reduce the heat and simmer, stirring frequently until it thickens, about 10 minutes.
  5. Pour the sugary mixture over the enchiladas and sprinkle with the remaining cinnamon.
  6. Bake in the preheated oven for 20 minutes, or until golden and bubbly.
