
Midnight Fried Rice

Ingredients:
- 2 cups Rice
- 1 tablespoon Olive Oil
- 2 cloves Garlic
- 1 medium Onion
- 1 Bell Pepper
- 1 Carrot
- 2 Egg
- 2 tablespoons Soy Sauce
- 1 teaspoon Sesame Oil
- to taste Salt and Pepper
Instructions:
- Cook the rice according to package instructions and set aside.
- In a large wok, heat oil over medium heat. Add minced garlic and diced onion and cook until onion is translucent.
- Add diced bell pepper and carrots and cook until vegetables are soft.
- Push the vegetables to one side of the wok and crack the eggs into the other side. Scramble the eggs and once cooked, mix with the vegetables.
- Add rice to the wok and mix well with the vegetables and eggs.
- Add soy sauce, sesame oil, salt, and pepper to the wok. Stir everything together until well mixed.
- Taste and adjust seasonings if needed. Enjoy your delicious midnight fried rice.
