Midnight Fried Rice

Ingredients:

  • 2 cups Rice
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic
  • 1 medium Onion
  • 1 Bell Pepper
  • 1 Carrot
  • 2 Egg
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Sesame Oil
  • to taste Salt and Pepper

Instructions:

  1. Cook the rice according to package instructions and set aside.
  2. In a large wok, heat oil over medium heat. Add minced garlic and diced onion and cook until onion is translucent.
  3. Add diced bell pepper and carrots and cook until vegetables are soft.
  4. Push the vegetables to one side of the wok and crack the eggs into the other side. Scramble the eggs and once cooked, mix with the vegetables.
  5. Add rice to the wok and mix well with the vegetables and eggs.
  6. Add soy sauce, sesame oil, salt, and pepper to the wok. Stir everything together until well mixed.
  7. Taste and adjust seasonings if needed. Enjoy your delicious midnight fried rice.
