
Midnight French Steak Tartare

Ingredients:
- 8 oz Fresh High-Quality Beef Tenderloin
- 2 Egg Yolk
- 1 tsp Dijon Mustard
- 1 Shallot
- 1 tbsp Capers
- 1 tbsp Flat-Leaf Parsley
- 1 tsp Tabasco Sauce
- To Taste Salt and Freshly Ground Black Pepper
Instructions:
- 1. Chill your beef in the freezer for about two hours, until it is firm but not frozen.
- 2. Once chilled, cut the beef into small dice, about 1/8 inch, then chill again in the freezer.
- 3. While the beef is chilling, prepare the other ingredients: mince the shallot, capers, and parsley.
- 4. In a small bowl, combine the egg yolks, mustard, tabasco, salt and pepper.
- 5. Add your minced ingredients to this mixture and stir well.
- 6. Just before serving, add the chilled, diced beef to the mixture and mix well.
- 7. Divide the steak tartare among two plates, heap into a mound, and serve immediately.
