
Midnight Exotic French Seafood Stew

Ingredients:
- 6 pieces Fresh scallops
- 8 pieces Fresh mussels
- 6 pieces Large prawns
- 1/2 cup White wine
- 3 pieces Garlic cloves
- 2 pieces Shallots
- 2 tbsp Butter
- 1/2 tsp Saffron threads
- 1 cup Diced tomatoes
- 2 cups Fish stock
- 2 sprigs Fresh thyme
- To Taste Salt
- To Taste Pepper
Instructions:
- In a large pot or dutch oven, melt butter over medium heat. Saute shallots and garlic until fragrant.
- Add the scallops, prawns and mussels to the pot and cook until slightly golden. Remove the seafood and set aside.
- To the same pot, add saffron, diced tomatoes, fish stock, and white wine. Bring to a boil.
- Reduce heat and add thyme, salt, and pepper. Let the soup simmer for about 15 minutes, for the flavors to meld together.
- Return the seafood to the pot and cook until the seafood is done. This should take around 3-5 minutes.
- Serve the stew hot with fresh bread for a satisfying, exotic French midnight meal.
