Midnight Exotic French Seafood Stew

Ingredients:

  • 6 pieces Fresh scallops
  • 8 pieces Fresh mussels
  • 6 pieces Large prawns
  • 1/2 cup White wine
  • 3 pieces Garlic cloves
  • 2 pieces Shallots
  • 2 tbsp Butter
  • 1/2 tsp Saffron threads
  • 1 cup Diced tomatoes
  • 2 cups Fish stock
  • 2 sprigs Fresh thyme
  • To Taste Salt
  • To Taste Pepper

Instructions:

  1. In a large pot or dutch oven, melt butter over medium heat. Saute shallots and garlic until fragrant.
  2. Add the scallops, prawns and mussels to the pot and cook until slightly golden. Remove the seafood and set aside.
  3. To the same pot, add saffron, diced tomatoes, fish stock, and white wine. Bring to a boil.
  4. Reduce heat and add thyme, salt, and pepper. Let the soup simmer for about 15 minutes, for the flavors to meld together.
  5. Return the seafood to the pot and cook until the seafood is done. This should take around 3-5 minutes.
  6. Serve the stew hot with fresh bread for a satisfying, exotic French midnight meal.
