Midnight Eggs in Purgatory

Ingredients:

  • 2 tablespoons Extra Virgin Olive Oil
  • 2 pcs Garlic Cloves
  • 1 pinch Crushed red pepper flakes
  • 1 can Canned diced tomatoes
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • 4 pcs Eggs
  • 1 bunch Fresh parsley or Basil for garnish
  • To taste Grated Parmesan cheese

Instructions:

  1. Heat the extra virgin olive oil in a non-stick skillet over medium heat.
  2. Add the garlic and red pepper flakes and cook for about a minute until garlic is golden.
  3. Add the canned tomatoes, salt, and pepper. Stir well, and let it simmer for about 10 to 15 minutes, until thickened.
  4. Make little dips in the sauce and crack each egg into them. Cover the skillet and cook until eggs are as per your liking. For soft yolks, it may take about 5 minutes.
  5. Remove from heat, garnish with fresh parsley or basil and sprinkle grated Parmesan cheese over it.
