
Midnight Cravings Vegetable Quesadilla

Ingredients:
- 2 pcs Bell peppers
- 1 pc Onion
- 2 pcs Tomato
- 1 pc Jalapeno pepper
- Handful Cilantro
- 4 pcs Tortillas
- 1 and 1/2 cups Cheddar Cheese
- To Taste Spice mix (Cumin, Paprika, Salt, Black Pepper)
- 2 tbsp Olive oil
Instructions:
- 1. Chop the bell peppers, onion, tomatoes, jalapeno pepper, and cilantro.
- 2. Heat 1 tbsp of olive oil in a pan over medium heat. Add the chopped vegetables and sauté till they are soft.
- 3. Sprinkle the spice mix over the vegetables and sauté for another minute.
- 4. Place a tortilla on a clean surface, scoop half of the vegetable mixture onto it, spread the cheese, and cover with another tortilla.
- 5. Heat the remaining olive oil in the same pan. Cook the tortilla on both sides until crispy and golden brown.
- 6. Repeat steps 4 and 5 with the remaining tortillas and filling.
- 7. Cut the quesadilla into quarters and serve hot.
