Midnight Cravings Chinese Chicken Stir-fry

Ingredients:

  • 1 Cup Boneless chicken
  • 4 Tablespoons Soy sauce
  • 2 Cloves Garlic
  • 1 Teaspoon Ginger
  • 1 Tablespoon Vegetable oil
  • 100 Grams Mixed vegetables
  • 1 Cup Chicken broth
  • 1 Teaspoon Cornstarch
  • To taste Salt
  • To taste Pepper
  • 2 Cups Cooked white rice

Instructions:

  1. 1. Cut the chicken into bite-sized pieces and marinate it with 2 tablespoons of soy sauce, chopped garlic, and grated ginger for 15 minutes.
  2. 2. Heat the vegetable oil in a wok or large frying pan and stir-fry the marinated chicken for a few minutes until it's golden on all sides. Remove chicken and set aside.
  3. 3. In the same pan, stir-fry the mixed vegetables for a few minutes until they're tender. If needed, add a bit more oil.
  4. 4. In a small bowl, mix the chicken broth with the cornstarch and remaining soy sauce. Add this sauce to the pan with the vegetables, seasoning with salt and pepper, and let it simmer for a few minutes until it thickens.
  5. 5. Add the stir-fried chicken back to the pan and stir everything together until all the ingredients are nicely coated with the sauce and heated through.
  6. 6. Serve the stir fry over the cooked rice for a comforting, delicious late-night meal.
