
Midnight Craving Italian Pork Risotto

Ingredients:
- 200 grams Pork
- 1 cup Arborio Rice
- 1 Medium Onion
- 2 Cloves Garlic
- 1/2 cup White Wine
- 2 cups Poultry broth
- 1/2 cup Parmesan Cheese
- 2 tablespoons Butter
- 1 tablespoon Olive oil
- to taste Salt
- to taste Black Pepper
Instructions:
- Cut the pork into small, bite-size pieces.
- Heat the olive oil and 1 tablespoon of butter in a heavy pot over medium heat.
- Add the pork pieces and cook until browned on all sides and fully cooked. Remove the pork from the pot and set aside.
- In the same pot, add onions, salt and pepper and cook until the onions are translucent.
- Add the garlic to the pot and cook for 1-2 minutes, until fragrant.
- Add the Arborio rice to the pot and stir to coat all the grains in the oil.
- Gradually add the white wine to the pot, stirring constantly, until the wine has been absorbed by the rice.
- Begin adding the poultry broth, a ladle at a time, stirring constantly, and waiting for each addition to be absorbed before adding the next.
- Return the cooked pork to the pot and stir to mix with the rice.
- When the rice is creamy and cooked to an al dente texture, remove the pot from the heat.
- Stir in the remaining tablespoon of butter and the Parmesan cheese until well mixed.
- Taste the risotto and adjust seasoning with additional salt and pepper if desired. Serve immediately.
