Midnight Craving Italian Pork Risotto

Ingredients:

  • 200 grams Pork
  • 1 cup Arborio Rice
  • 1 Medium Onion
  • 2 Cloves Garlic
  • 1/2 cup White Wine
  • 2 cups Poultry broth
  • 1/2 cup Parmesan Cheese
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. Cut the pork into small, bite-size pieces.
  2. Heat the olive oil and 1 tablespoon of butter in a heavy pot over medium heat.
  3. Add the pork pieces and cook until browned on all sides and fully cooked. Remove the pork from the pot and set aside.
  4. In the same pot, add onions, salt and pepper and cook until the onions are translucent.
  5. Add the garlic to the pot and cook for 1-2 minutes, until fragrant.
  6. Add the Arborio rice to the pot and stir to coat all the grains in the oil.
  7. Gradually add the white wine to the pot, stirring constantly, until the wine has been absorbed by the rice.
  8. Begin adding the poultry broth, a ladle at a time, stirring constantly, and waiting for each addition to be absorbed before adding the next.
  9. Return the cooked pork to the pot and stir to mix with the rice.
  10. When the rice is creamy and cooked to an al dente texture, remove the pot from the heat.
  11. Stir in the remaining tablespoon of butter and the Parmesan cheese until well mixed.
  12. Taste the risotto and adjust seasoning with additional salt and pepper if desired. Serve immediately.
