Midnight Craving Chicken and Rice à la Française

Ingredients:

  • 2 pieces Chicken Breasts
  • 1 cup Long-Grain White Rice
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 Cloves of garlic
  • 1/3 cup Dry White Wine
  • 2 cups Chicken stock
  • 2 sprigs Fresh Thyme
  • to taste Salt and pepper

Instructions:

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a pan over medium heat.
  3. Add the chicken to the pan and cook until golden brown on both sides and cooked through.
  4. Remove the chicken from the pan and set aside.
  5. In the same pan, melt the butter and add the finely chopped garlic, stirring until fragrant.
  6. Stir in the rice to coat with the butter and garlic.
  7. Pour in the dry white wine and stir, cooking until the wine is mostly evaporated.
  8. Pour in the chicken stock, add the thyme sprigs and bring to a simmer.
  9. Reduce heat to low, cover the pan and let it cook until the rice is tender, about 20 minutes.
  10. Return the chicken to the pan and heat through.
  11. Serve the chicken on a bed of the garlic and thyme-infused rice.
