
Midnight Craving Chicken and Rice à la Française

Ingredients:
- 2 pieces Chicken Breasts
- 1 cup Long-Grain White Rice
- 2 tablespoons Olive oil
- 2 tablespoons Butter
- 2 Cloves of garlic
- 1/3 cup Dry White Wine
- 2 cups Chicken stock
- 2 sprigs Fresh Thyme
- to taste Salt and pepper
Instructions:
- Season the chicken breasts with salt and pepper on both sides.
- Heat the olive oil in a pan over medium heat.
- Add the chicken to the pan and cook until golden brown on both sides and cooked through.
- Remove the chicken from the pan and set aside.
- In the same pan, melt the butter and add the finely chopped garlic, stirring until fragrant.
- Stir in the rice to coat with the butter and garlic.
- Pour in the dry white wine and stir, cooking until the wine is mostly evaporated.
- Pour in the chicken stock, add the thyme sprigs and bring to a simmer.
- Reduce heat to low, cover the pan and let it cook until the rice is tender, about 20 minutes.
- Return the chicken to the pan and heat through.
- Serve the chicken on a bed of the garlic and thyme-infused rice.
