
Midnight Comfort Onigiri

Ingredients:
- 1 cup Japanese Short Grain Rice
- 1.2 cups Water
- 1 teaspoon Rice Vinegar
- 0.5 teaspoon Salt
- 2 Nori Sheets
- to taste Furikake Seasoning
- 2 Umeboshi Plums
Instructions:
- Wash the rice under cold water until the water runs clear.
- Bring the washed rice and water to a boil in a pot. Cover and let it simmer for about 20 minutes, or until the water is absorbed.
- Let rice cool for a bit and then add rice vinegar and salt. Mix well.
- Wet your hands and form rice into triangular or round shapes. Leave a small hollow in the rice and place a bit of umeboshi plum inside, then cover it with more rice.
- Wrap each rice ball with a nori sheet and sprinkle some furikake seasoning on top.
- Serve immediately or wrap them in plastic wrap for a midnight snack.
