Midnight Comfort Onigiri

Ingredients:

  • 1 cup Japanese Short Grain Rice
  • 1.2 cups Water
  • 1 teaspoon Rice Vinegar
  • 0.5 teaspoon Salt
  • 2 Nori Sheets
  • to taste Furikake Seasoning
  • 2 Umeboshi Plums

Instructions:

  1. Wash the rice under cold water until the water runs clear.
  2. Bring the washed rice and water to a boil in a pot. Cover and let it simmer for about 20 minutes, or until the water is absorbed.
  3. Let rice cool for a bit and then add rice vinegar and salt. Mix well.
  4. Wet your hands and form rice into triangular or round shapes. Leave a small hollow in the rice and place a bit of umeboshi plum inside, then cover it with more rice.
  5. Wrap each rice ball with a nori sheet and sprinkle some furikake seasoning on top.
  6. Serve immediately or wrap them in plastic wrap for a midnight snack.
