
Midnight Comfort Mediterranean Chicken

Ingredients:
- 2 pieces Boneless chicken breasts
- 2 cloves Garlic
- 1 piece Lemon
- 2 tablespoons Olive oil
- 1 cup Chicken stock
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- to taste Salt and pepper
- 1 handful Fresh parsley
- 100 grams Feta cheese
- 1/2 cup Pitted olives
Instructions:
- Marinate the chicken breasts in half the olive oil, the juice of the lemon, and the oregano, paprika, and salt and pepper. Let it rest for about 5 minutes.
- Heat up a large pan over medium heat, add the rest of the olive oil and the garlic, and cook for 1-2 minutes until fragrant.
- Add the chicken breasts to the pan and brown them evenly on both sides, then pour over the chicken stock.
- Cover the pan and let it simmer for about 20 minutes, or until the chicken is cooked through and the stock has reduced.
- Top the chicken with the fresh parsley, feta cheese, and pitted olives, and let it all warm through for a couple of minutes before serving.
