Midnight Comfort Mediterranean Chicken

Ingredients:

  • 2 pieces Boneless chicken breasts
  • 2 cloves Garlic
  • 1 piece Lemon
  • 2 tablespoons Olive oil
  • 1 cup Chicken stock
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika
  • to taste Salt and pepper
  • 1 handful Fresh parsley
  • 100 grams Feta cheese
  • 1/2 cup Pitted olives

Instructions:

  1. Marinate the chicken breasts in half the olive oil, the juice of the lemon, and the oregano, paprika, and salt and pepper. Let it rest for about 5 minutes.
  2. Heat up a large pan over medium heat, add the rest of the olive oil and the garlic, and cook for 1-2 minutes until fragrant.
  3. Add the chicken breasts to the pan and brown them evenly on both sides, then pour over the chicken stock.
  4. Cover the pan and let it simmer for about 20 minutes, or until the chicken is cooked through and the stock has reduced.
  5. Top the chicken with the fresh parsley, feta cheese, and pitted olives, and let it all warm through for a couple of minutes before serving.
