
Midnight Comfort Indian Beef Curry

Ingredients:
- 500 grams beef chunks
- 1 piece onion
- 2 pieces garlic cloves
- 1 inch piece ginger
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 2 pieces tomatoes
- 1 cup coconut milk
- to taste salt
- 2 tablespoons vegetable oil
- a bunch fresh coriander leaves for garnish
Instructions:
- Start by heating the oil in a large saucepan over medium heat. Add in the chopped onions, chopped garlic and grated ginger, sauté until onions become tender and the raw smell of ginger and garlic goes away.
- Now add the beef chunks sauté until they are brown from all sides. Add in the red chilli powder, turmeric powder, garam masala and salt. Mix everything well.
- Add in chopped tomatoes and again mix everything. Cover and cook for about 10 minutes, until the tomatoes are well cooked and mixed with the spices.
- Now add the coconut milk and mix well. Cover and simmer for about 30 minutes until the beef is tender.
- Check for seasoning, adding more salt if necessary. Garnish with fresh coriander leaves.
- Serve hot with naan or rice for a comforting midnight meal.
