Midnight Comfort Indian Beef Curry

Ingredients:

  • 500 grams beef chunks
  • 1 piece onion
  • 2 pieces garlic cloves
  • 1 inch piece ginger
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 2 pieces tomatoes
  • 1 cup coconut milk
  • to taste salt
  • 2 tablespoons vegetable oil
  • a bunch fresh coriander leaves for garnish

Instructions:

  1. Start by heating the oil in a large saucepan over medium heat. Add in the chopped onions, chopped garlic and grated ginger, sauté until onions become tender and the raw smell of ginger and garlic goes away.
  2. Now add the beef chunks sauté until they are brown from all sides. Add in the red chilli powder, turmeric powder, garam masala and salt. Mix everything well.
  3. Add in chopped tomatoes and again mix everything. Cover and cook for about 10 minutes, until the tomatoes are well cooked and mixed with the spices.
  4. Now add the coconut milk and mix well. Cover and simmer for about 30 minutes until the beef is tender.
  5. Check for seasoning, adding more salt if necessary. Garnish with fresh coriander leaves.
  6. Serve hot with naan or rice for a comforting midnight meal.
