
Midnight Comfort Fried Rice

Ingredients:
- 1 cup Long grain white rice
- 2 pieces Chicken breasts
- 3 tbsps Soy sauce
- 2 Eggs
- 1 cup Mixed vegetables
- 2 stalks Green onions
- 2 cloves Garlic
- 1 tbsp Sesame oil
- to taste Pepper
- to taste Salt
Instructions:
- Cook the rice according to package instructions and set it aside to cool.
- Season the chicken breasts with salt and pepper. In a large wok or skillet, cook the chicken over medium heat until thoroughly cooked. Remove the chicken, dice it into small pieces, and set it aside.
- In the same wok, add the beaten eggs and scramble them until fully cooked. Remove the eggs and set them aside.
- In the same wok, add the sesame oil and sauté the garlic until fragrant. Then add the mixed vegetables and cook until they are tender.
- Add back the cooked rice, diced chicken, and scrambled eggs to the wok. Then add the soy sauce and stir everything together properly until well mixed.
- Chop the green onions and sprinkle them over the top of the fried rice for garnish before serving. Enjoy your comfort midnight snack!
