Midnight Comfort Fried Rice

Ingredients:

  • 1 cup Long grain white rice
  • 2 pieces Chicken breasts
  • 3 tbsps Soy sauce
  • 2 Eggs
  • 1 cup Mixed vegetables
  • 2 stalks Green onions
  • 2 cloves Garlic
  • 1 tbsp Sesame oil
  • to taste Pepper
  • to taste Salt

Instructions:

  1. Cook the rice according to package instructions and set it aside to cool.
  2. Season the chicken breasts with salt and pepper. In a large wok or skillet, cook the chicken over medium heat until thoroughly cooked. Remove the chicken, dice it into small pieces, and set it aside.
  3. In the same wok, add the beaten eggs and scramble them until fully cooked. Remove the eggs and set them aside.
  4. In the same wok, add the sesame oil and sauté the garlic until fragrant. Then add the mixed vegetables and cook until they are tender.
  5. Add back the cooked rice, diced chicken, and scrambled eggs to the wok. Then add the soy sauce and stir everything together properly until well mixed.
  6. Chop the green onions and sprinkle them over the top of the fried rice for garnish before serving. Enjoy your comfort midnight snack!
