Midnight Chinese Egg Stir-fry

Ingredients:

  • 4 units Eggs
  • 2 tablespoons Soy Sauce
  • 2 cloves Garlic
  • 3 units Spring Onions
  • 1 tablespoon Sesame Oil
  • 2 cups Rice

Instructions:

  1. 1. Cook the rice as per package instructions until it is fluffy and set it aside.
  2. 2. Crack the eggs in a bowl, beat them and season with a dash of soy sauce and a pinch of salt.
  3. 3. Heat a drizzle of sesame oil in a pan over medium heat, add the beaten eggs and scramble them until they are fully cooked, then remove them from the pan.
  4. 4. In the same pan, add a bit more sesame oil, chop the garlic and spring onions and fry them until they become aromatic.
  5. 5. Add the cooked rice to the pan, then the scrambled eggs, mix everything together and fry for a couple more minutes.
  6. 6. Once everything is well mixed, add the rest of the soy sauce and mix until everything is evenly coated.
  7. 7. Serve the stir-fry hot, garnish with some extra chopped spring onions if desired, and enjoy your Midnight Chinese Egg Stir-fry!
