
Midnight Chickpea Temaki (Japanese Hand-Rolled Sushi)

Ingredients:
- 1 cup sushi rice
- 2 tablespoons vinegar, rice
- 1 teaspoon sugar
- 2 tablespoons soy sauce
- 1 cup canned chickpeas, drained and rinsed
- 4 sheets nori (seaweed) sheets
- 0.5 cucumber cucumber, sliced into thin strips
- 1 avocado avocado, sliced
Instructions:
- Prepare the sushi rice per package instructions.
- In a small saucepan, stir together the rice vinegar and sugar. Heat on low until the sugar dissolves. Pour this mixture over the cooked rice, and stir well to combine.
- In a bowl, toss the chickpeas with the soy sauce. Let sit for 5 minutes for the flavors to marinate.
- To assemble the temaki sushi, lay a nori sheet on a flat surface. Spread a thin layer of rice over half of the nori. On one corner of the rice-covered half, place a few chickpeas, a few strips of cucumber, and a couple avocado slices.
- Begin rolling the sushi by folding the corner with the fillings across the rice, making a cone shape. Continue rolling the cone up the remaining nori sheet. Repeat until all ingredients are used.
- Serve immediately with additional soy sauce for dipping if desired.
