
Midnight Chicken Quesadillas

Ingredients:
- 2 cups, shredded chicken
- 1 cup, shredded cheddar cheese
- 1 large, diced green bell pepper
- 1 medium, diced onion
- 8 medium tortillas
- 2 tablespoons oil
Instructions:
- Heat one tablespoon of oil in a large skillet over medium heat. Add the diced onions and green bell peppers to the pan. Cook until the vegetables are soft and the onions are translucent.
- Add the shredded chicken to the pan and cook until heated through. Remove from heat.
- Lay out the tortillas on a flat surface. Spread a portion of the chicken and vegetable mixture on one half of each tortilla. Sprinkle with a portion of the shredded cheese.
- Fold the tortilla over to cover the filling. Press lightly to help the quesadilla hold its shape.
- Heat an additional tablespoon of oil in the skillet over medium heat. Cook the quesadillas on each side until golden brown and the cheese is melted. This usually takes about 3-4 minutes per side.
- Remove from the skillet and let it cool for a minute. Serve hot with salsa, sour cream, and guacamole.
