Midnight Chicken Quesadillas

Ingredients:

  • 2 cups, shredded chicken
  • 1 cup, shredded cheddar cheese
  • 1 large, diced green bell pepper
  • 1 medium, diced onion
  • 8 medium tortillas
  • 2 tablespoons oil

Instructions:

  1. Heat one tablespoon of oil in a large skillet over medium heat. Add the diced onions and green bell peppers to the pan. Cook until the vegetables are soft and the onions are translucent.
  2. Add the shredded chicken to the pan and cook until heated through. Remove from heat.
  3. Lay out the tortillas on a flat surface. Spread a portion of the chicken and vegetable mixture on one half of each tortilla. Sprinkle with a portion of the shredded cheese.
  4. Fold the tortilla over to cover the filling. Press lightly to help the quesadilla hold its shape.
  5. Heat an additional tablespoon of oil in the skillet over medium heat. Cook the quesadillas on each side until golden brown and the cheese is melted. This usually takes about 3-4 minutes per side.
  6. Remove from the skillet and let it cool for a minute. Serve hot with salsa, sour cream, and guacamole.
