Midnight Chicken Confite

Ingredients:

  • 2 pieces Chicken thighs
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 4 pieces Garlic cloves
  • 1 sprig Thyme
  • enough for pan frying Olive oil
  • 0.5 cup Red wine
  • 2 pieces Bay leaf

Instructions:

  1. Clean the chicken thighs and pat them dry.
  2. Season the chicken thighs with salt and pepper.
  3. Heat a generous dash of olive oil in a skillet. Once heated, add the chicken thighs skin side down, and cook until the skin is crispy. This will take around 5-7 minutes
  4. Turn the chicken pieces and add the garlic cloves, red wine, thyme and bay leaves to the skillet.
  5. Cover the skillet and let the chicken cook on low heat for 2 hours.
  6. Remove the chicken from the skillet and discard the bay leaves and thyme. You can use the remaining sauce as a gravy if desired.
  7. Serve the chicken confite hot with a side of your choice.
