Midnight Chicken Confite

Ingredients:
- 2 pieces Chicken thighs
- 1 tsp Salt
- 0.5 tsp Pepper
- 4 pieces Garlic cloves
- 1 sprig Thyme
- enough for pan frying Olive oil
- 0.5 cup Red wine
- 2 pieces Bay leaf
Instructions:
- Clean the chicken thighs and pat them dry.
- Season the chicken thighs with salt and pepper.
- Heat a generous dash of olive oil in a skillet. Once heated, add the chicken thighs skin side down, and cook until the skin is crispy. This will take around 5-7 minutes
- Turn the chicken pieces and add the garlic cloves, red wine, thyme and bay leaves to the skillet.
- Cover the skillet and let the chicken cook on low heat for 2 hours.
- Remove the chicken from the skillet and discard the bay leaves and thyme. You can use the remaining sauce as a gravy if desired.
- Serve the chicken confite hot with a side of your choice.
