
Midnight Biryani

Ingredients:
- 2 cups Basmati Rice
- 500 grams Chicken thighs
- 2 large Onions
- 2 medium Tomatoes
- 2 tablespoons Ginger-garlic paste
- 2 tablespoons Biryani Masala
- 1/2 cup Curd
- 1/2 cup Coriander leaves
- 1/4 cup Mint leaves
- to taste Salt
- 3 tablespoons Ghee
Instructions:
- Wash and soak the basmati rice for 30 minutes.
- In a heavy-bottomed pan, heat 2 tablespoons of ghee and add sliced onions. Sauté until golden brown.
- Add ginger-garlic paste, chopped tomatoes and cook until the tomatoes are soft.
- Add the chicken pieces and cook until they turn white.
- Add Biryani masala, curd, salt and mix well. Cook for 15-20 minutes on low flame.
- In another heavy-bottomed pan, boil 4 cups of water. Once the water starts boiling, add the soaked and drained rice to it.
- Cook until 70% done, then drain the water.
- Layer the semi-cooked rice over the chicken gravy. Top it with remaining ghee, mint and coriander leaves.
- Cover the pan and cook on low heat for about 20-25 minutes.
