Mexican Veggie Quesadillas

Ingredients:

  • 8 pieces Flour tortillas
  • 1.5 cups Cheddar cheese
  • 2 pieces Bell peppers
  • 1 piece Zucchini
  • 1 piece Onion
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Chili powder

Instructions:

  1. Chop all the vegetables finely.
  2. In a saucepan, heat the olive oil over medium heat. Add the chopped vegetables, garlic, salt, pepper, and chili powder.
  3. Stir occasionally until vegetables are soft and slightly caramelized.
  4. Heat another pan over medium heat. Place a tortilla in the pan, sprinkle some cheese on half of the tortilla, and spoon the stir-fried vegetables onto the cheese. Fold the tortilla in half over the filling.
  5. Cook for 2-3 minutes until the tortilla is golden brown. Flip and cook the other side until golden brown and cheese is melted.
  6. Repeat the process with the remaining tortillas and filling.
  7. Serve the quesadillas warm with your choice of dip like salsa or guacamole.
