
Mexican Veggie Quesadillas

Ingredients:
- 8 pieces Flour tortillas
- 1.5 cups Cheddar cheese
- 2 pieces Bell peppers
- 1 piece Zucchini
- 1 piece Onion
- 2 cloves Garlic
- 2 tablespoons Olive oil
- 1 tsp Salt
- 1 tsp Black pepper
- 1 tsp Chili powder
Instructions:
- Chop all the vegetables finely.
- In a saucepan, heat the olive oil over medium heat. Add the chopped vegetables, garlic, salt, pepper, and chili powder.
- Stir occasionally until vegetables are soft and slightly caramelized.
- Heat another pan over medium heat. Place a tortilla in the pan, sprinkle some cheese on half of the tortilla, and spoon the stir-fried vegetables onto the cheese. Fold the tortilla in half over the filling.
- Cook for 2-3 minutes until the tortilla is golden brown. Flip and cook the other side until golden brown and cheese is melted.
- Repeat the process with the remaining tortillas and filling.
- Serve the quesadillas warm with your choice of dip like salsa or guacamole.
