
Mexican Vegetable Breakfast Burritos

Ingredients:
- 2 tablespoons olive oil
- 2 pcs bell peppers
- 1 pc red onion
- 1 pc zucchini
- 8 pcs eggs
- 1 cup grated cheddar cheese
- 8 pcs flour tortillas
- 1 cup avocado slices
- to taste salsa
- to taste salt and pepper
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add the bell peppers, red onion, and zucchini to the pan. Cook until vegetables are tender, about 10 minutes. Season with salt and pepper.
- While the vegetables are cooking, whisk the eggs in a bowl.
- Pour the eggs over the cooked vegetables in the skillet and stir gently until the eggs are fully cooked.
- Warm the flour tortillas in the oven or on the stove. Place a generous scoop of the vegetable and egg mixture on each tortilla.
- Sprinkle some grated cheddar cheese over the mixture. Top with avocado slices and salsa, then roll up the tortilla to create a burrito.
- Serve immediately while hot.
