Mexican Vegetable Breakfast Burritos

Ingredients:

  • 2 tablespoons olive oil
  • 2 pcs bell peppers
  • 1 pc red onion
  • 1 pc zucchini
  • 8 pcs eggs
  • 1 cup grated cheddar cheese
  • 8 pcs flour tortillas
  • 1 cup avocado slices
  • to taste salsa
  • to taste salt and pepper

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the bell peppers, red onion, and zucchini to the pan. Cook until vegetables are tender, about 10 minutes. Season with salt and pepper.
  3. While the vegetables are cooking, whisk the eggs in a bowl.
  4. Pour the eggs over the cooked vegetables in the skillet and stir gently until the eggs are fully cooked.
  5. Warm the flour tortillas in the oven or on the stove. Place a generous scoop of the vegetable and egg mixture on each tortilla.
  6. Sprinkle some grated cheddar cheese over the mixture. Top with avocado slices and salsa, then roll up the tortilla to create a burrito.
  7. Serve immediately while hot.
