Mexican Tropical Fruit Chicken

Ingredients:

  • 4 pieces Chicken breasts
  • 2 pieces Mango
  • 1 piece Avocado
  • 1 piece Lime
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 2 tablespoons Olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with the chili powder, salt, and pepper.
  3. Heat the olive oil in an oven-safe skillet or frying pan over medium heat. Add the chicken breasts and cook until they are browned on both sides. Remove the skillet from heat.
  4. Peel and dice the mango and avocado. Juice the lime. In a bowl, combine the diced mango, avocado, and lime juice.
  5. Top the chicken breasts with the mango and avocado mixture.
  6. Bake the chicken in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the fruit topping is bubbly and slightly caramelized.
  7. Allow the chicken to rest for a few minutes before serving.
