Ingredients:
- 8 unit Eggs
- 2 unit Tomatoes
- 1 unit Green Bell Pepper
- 1 unit Onion
- 2 unit Garlic cloves
- 1 unit Jalapeño
- 2 tablespoon Olive Oil
- To Taste Salt
- To Taste Black Pepper
- 1 unit Avocado
- A Handful Coriander leaves
Instructions:
- Start by chopping the tomatoes, bell pepper, onion, garlic cloves, and jalapeño into small pieces.
- Heat the olive oil in a skillet over medium heat. Once hot, add the chopped vegetables and sauté until they soften and the onions turn translucent.
- While the vegetables are cooking, whisk the eggs in a bowl. Season with salt and pepper.
- Pour the beaten eggs over the sautéed vegetables. Reduce the heat to low and stir gently until the eggs are cooked to your liking.
- Garnish with chopped avocado and fresh coriander leaves.
- Serve hot with tortillas or bread.
