Mexican Style Scrambled Eggs - Huevos Revueltos Estilo Mexicano

Ingredients:

  • 8 unit Eggs
  • 2 unit Tomatoes
  • 1 unit Green Bell Pepper
  • 1 unit Onion
  • 2 unit Garlic cloves
  • 1 unit Jalapeño
  • 2 tablespoon Olive Oil
  • To Taste Salt
  • To Taste Black Pepper
  • 1 unit Avocado
  • A Handful Coriander leaves

Instructions:

  1. Start by chopping the tomatoes, bell pepper, onion, garlic cloves, and jalapeño into small pieces.
  2. Heat the olive oil in a skillet over medium heat. Once hot, add the chopped vegetables and sauté until they soften and the onions turn translucent.
  3. While the vegetables are cooking, whisk the eggs in a bowl. Season with salt and pepper.
  4. Pour the beaten eggs over the sautéed vegetables. Reduce the heat to low and stir gently until the eggs are cooked to your liking.
  5. Garnish with chopped avocado and fresh coriander leaves.
  6. Serve hot with tortillas or bread.
