Mexican Style Scrambled Eggs (Huevos a la Mexicana)

Ingredients:

  • 8 units Eggs
  • 2 units Tomatoes
  • 2 units Green chilies
  • 1 unit Onion
  • 1 unit Garlic clove
  • 2 tablespoons Avocado oil
  • To taste Salt
  • To taste Black pepper

Instructions:

  1. Start by dicing the tomatoes, green chilies, and onion.
  2. Heat the avocado oil in a large skillet over medium heat. Add the diced onion, green chilies, and garlic. Sauté until the onions become translucent and the green chilies soften.
  3. Add the chopped tomatoes to the skillet and cook for a few minutes until they release their juice.
  4. Meanwhile, whisk the eggs in a bowl. Season with salt and pepper to your liking.
  5. Pour the beaten eggs into the skillet. Stir gently until the eggs begin to set.
  6. Reduce the heat to low and let the eggs cook until they are done to your liking.
  7. Serve your huevos a la Mexicana hot with tortillas on the side.
