Ingredients:
- 8 units Eggs
- 2 units Tomatoes
- 2 units Green chilies
- 1 unit Onion
- 1 unit Garlic clove
- 2 tablespoons Avocado oil
- To taste Salt
- To taste Black pepper
Instructions:
- Start by dicing the tomatoes, green chilies, and onion.
- Heat the avocado oil in a large skillet over medium heat. Add the diced onion, green chilies, and garlic. Sauté until the onions become translucent and the green chilies soften.
- Add the chopped tomatoes to the skillet and cook for a few minutes until they release their juice.
- Meanwhile, whisk the eggs in a bowl. Season with salt and pepper to your liking.
- Pour the beaten eggs into the skillet. Stir gently until the eggs begin to set.
- Reduce the heat to low and let the eggs cook until they are done to your liking.
- Serve your huevos a la Mexicana hot with tortillas on the side.
