
Mexican Style Pasta Snack

Ingredients:
- 2 cups uncooked Pasta
- 2 tablespoons Olive oil
- 1 small, diced Onion
- 1 diced Red bell pepper
- 2 cloves minced Garlic
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 cup drained Canned corn
- 1 cup rinsed and drained Black beans
- 1 large, diced Tomato
- 1 bunch chopped Cilantro
- 1 juiced Lime
- 1 cup shredded Cheddar cheese
Instructions:
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion and bell pepper, and cook until softened, about 5 minutes.
- Add the garlic, cumin, and paprika to the skillet. Stir well and cook for another minute.
- Add the cooked pasta to the skillet, along with the corn, black beans, and diced tomato. Stir well to combine all the ingredients.
- Sprinkle the shredded cheese over the pasta, allowing it to melt from the heat of the pasta.
- Remove the skillet from the heat and squeeze the lime juice over the pasta. Sprinkle the chopped cilantro over the top.
- Serve the pasta snack warm. Enjoy!
