Mexican Style Pasta Snack

Ingredients:

  • 2 cups uncooked Pasta
  • 2 tablespoons Olive oil
  • 1 small, diced Onion
  • 1 diced Red bell pepper
  • 2 cloves minced Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 cup drained Canned corn
  • 1 cup rinsed and drained Black beans
  • 1 large, diced Tomato
  • 1 bunch chopped Cilantro
  • 1 juiced Lime
  • 1 cup shredded Cheddar cheese

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and bell pepper, and cook until softened, about 5 minutes.
  3. Add the garlic, cumin, and paprika to the skillet. Stir well and cook for another minute.
  4. Add the cooked pasta to the skillet, along with the corn, black beans, and diced tomato. Stir well to combine all the ingredients.
  5. Sprinkle the shredded cheese over the pasta, allowing it to melt from the heat of the pasta.
  6. Remove the skillet from the heat and squeeze the lime juice over the pasta. Sprinkle the chopped cilantro over the top.
  7. Serve the pasta snack warm. Enjoy!
